The locker butchered a certified prime beef. This rack didn’t sell fast enough but I think my son-in-law had it planned all along!
He snagged it and brought it over and said what night is supper!
My favorite seasoning for beef ribs is good ol kosher salt & pepper. Seasoned up the day before and left uncovered till the cook started the next morning.
They were smoked 10 hours at 235 degrees and later the homemade baked beans with home cured bacon on top were added to the smoker.

It was also my daughter’s birthday (married to the butcher) requested ham balls and cheesy hash brown potatoes.
This rack of ribs could be the best beef I’ve ever ate. With all the marbling the beef was very rich and after eating one rib I hit a wall ….. real bad enough was enough.
The rack after 10 hours was at 185 degrees when we partook in the meal. I’ve never smoked prime beef but I wonder if I should have let the IT get higher? Either way it was a pleasure to eat! Here comes a bunch of the main event pics.
