Celebrating the end of amazon prime week because my wife spent way too much money. Also because have some good friends visiting from CO. Had a prime rib been sitting in freezer waiting for a special occasion. Was 10.75 lbs, three bones. Big one. Cooking to medium rare, 125 degrees. Took everyone out boating while it cooked. Bone was mostly separated and tied with a net.
Seered in a cast iron pan on all sides. Put some olive oil in bottom and seered about a minute per side. After seer, seasoned with W sauce as binder, montreal and cherry habanero rub.
TBS rolling on the yoder set at 230.
It takes a lot longer for a bone in PR than a boneless. This one took 4.5 hours. I had to bump up temp to move it along faster.
Finally ready to pull at 125. Let sit for ten and removed bones and sliced. The RFX probe matched the thermapen exactly.
Plated with mashers, broiled taters and green beans.
Dessert was strawberry poke cake. Delicious. New secret was using sweetened condensed milk poured on too.
