This is a Thai condiment that sits on tables in restaurants and in most homes from what I have been seeing lately. I slightly Americanized it a little.

No measurements, just by looks and taste.

Thai peppers
red jalapeno peppers (both seeded)
white onion
garlic
quality fish sauce
white rice vinegar
Lime Juice
sugar

It smells great. I will give it a couple of days in the fridge before I use it.

Late night edit: I forgot to add lime juice. I just did and had a little taste. It is hot but tastes damn good. This will be great to top almost any dish where you want a little heat with umami flavors.

I just made up a small batch of this. I wasn't able to get Thai fish sauce so I'm using a Vietnamese fish sauce. I believe the Thai fish sauce is a bit more savory while the Vietnamese fish sauce is a touch sweeter.

It's pretty good as is, but it should be a great sauce once it's had time to mellow out in the fridge for a bit.

I used Red Boat fish sauce which is Vietnamese. After one day in the fridge it completely changed the taste of it. I will probably make it fairly often.

I picked up some Thai Squid Brand fish sauce today and compared it to the Vietnamese Little Saigon brand I used yesterday. The Squid Brand isn't as quite as sweet (sweet being relative since we're talking about fish sauce!) and seems to have a bit more of a pungent odor. I'll have to try making this again.

I had originally seen the sauce on Pailins Kitchen (Thai YouTube chef) she recommended Red Boat, Squid Brand and one other I can't recall at the moment. Squid Brand is the only one I can find locally.

Personally, I don't like Red Boat as it has an off flavor to me. I prefer the fish sauce that a market in Grand Forks ND sells. Don't remember the brand. Salty as all fish sauce beyond my liking, but the back flavor is great.
I mostly use Coconut Amino to add the umami with less salt.

My wife was hesitant to even try it thinking it would be too spicy for her. Then her Filipino friends showed up for a breakfast with fried fish and they absolutely loved it on top of their fish.

My wife reluctantly gave it a taste and decided she loved it too. I got up this morning and there was just a half filled jar of fish sauce left. :emoji_astonished:

Round two I decided it needed some cilantro added. I think this will give it an even better taste.

Looks great West Coast Chris. Funny we have more Thai restaurants around here than Mexican, and I still haven't tried one.

Holy smokes gonna do it….its crazy but that’s almost the same combo as the Asian cucumber salad my wife just did for our A5 cook….just minus the hot peppers!

Where do you get Thai peppers? Kroger is all that is half way close. we also have a natural grocers up here,but never been

You are missing out. I don't like it all the time but when in the mood there are some really good dishes at a Thai place.

I just got a 4oz pack at Walmart. If you can't get Thai peppers you can substitute with a Serono or like I did with Jalapeno. I prefer the red ones because the are more ripe than the green which gives them a sweeter less sharp taste. My wife gets them at an Asian market.

I disagree on the chili peppers. I have not found an acceptable substitution for a Thai chili. My wife agrees. My last batch of curry chicken didn't have any Thai chili as they got lost in the pantry. Don't remember what I substituted but my wife said it wasn't the same as with 3 dried Thai in the coconut broth.
