Smokey Creamy Red Jalapeno Sauce

This stuff is the food version of crack - So addicting.

First grill up about 8 large red jalapenos, Red Onion slices and 4 or 5 garlic cloves.

When the jalapenos have cooled a bit cut off the tops and scoop out most of the seeds depending on how hot you want it. Toss them in a blender along with the onions and garlic. Puree them until you can get it as fine as you can. Scrape down the sides then add the salt, apple cider vinegar and lime juice. Start up the blender again and slowly pour in the avocado oil. This might take several minutes to get all the peppers and any seeds completely broken down.

In the end you will have a nice creamy sauce that you can add to any dish. You can use green jalapenos and white onion but this version adds a little bit of sweetness that the green jalapenos just will not deliver. If you don't grow them or find them in your local market look in an Asian market. They will most likely have them.

8 Large red Jalapenos
1/4 of a large red onion sliced to grill
4 or 5 garlic cloves
1 tsp smoked sea salt
1 large lime juiced
1 Tbs apple cider vinegar
3/4 cup avocado oil

Here I put some on a skirt steak fajita burrito

This has a great kick even with most of the seeds removed with a nice sweet undertone.
 
I have made a few more burritos since I posted this. I think I like this even more than the grilled salsa I make regularly.

I will have to try it with green jalapenos soon so I can compare the two. I haven't made the green version in quite a while.
