A little grill work. Thick cut tenderloin marinated 4 hrs in Soy Sauce, Rice Wine Vinegar and Mae Ploy Sweet Chili. I really like Mae Ploy

I put the meat in a ziplock bag and pour in low salt soy sauce maybe 1/5 rice wine vinegar and a 1/4 cup of Mae Ploy and get the air out. Let it sit for 4 hours turning the bag over occasionally. That beautiful crusting comes from the Mae Ploy.
