Found a pack on sale $2.79 lb. couldn't pass on them.
Used indirect on the kettle KBB with some Pistachio Shells
Kettle held @ 225°F

Took about 1-1/2 hr. to reach 144°F
The smaller one finished first so I pulled it
Let them rest while I made some Tatter cakes

Served with Broccoli,Tatter Cakes,home made Apple Pie filling.
Plus a stuffed Cherry Pepper

Another awesome meal there Richie. Wow can't remember last time I had potato cakes.

That’s a meal I could get behind. I haven’t had potato cakes in awhile. I should call up nana and see if she’ll make some.

We always ate ours with sliced canned peaches. The apple pie filling sounds good too.

The potato cake I grew up with was just that left over mashed potatoes add a egg or 2 depending on the amount of potatoes and chopped onion make into balls flatting the balls and brown both sides.

Great looking plate Richie, Making me hungry at the end of my shift. Smoked pork tenderloins mmm and tatter cakes yum..... Now I have to figure something out this morning lol. Point for that.
