Pork tenderloin stuffed w/cream cheese,scallions and hot Italian sausage

I fixed up an easy Sunday dinner. I started by cooking up a pound of my homemade hot Italian sausage.

 

I sliced up some scallions and warmed up some cream cheese while the sausage was cooling.


I sliced the tenderloins open and pounded them flat


I mixed the cream cheese and scallions and cooled sausage together and added to the tenderloins.

 

I tied up the loins(no were near as fancy as Foams tie jobs)and added some rub.


I smoked them at 225* for just about 2.5 hours w/apple chips. I took the IT to 147* and here are the loins out of the smoker resting

Thanks guys for looking and for the points , I had to add this photo from the little loin which I sliced for dinner tonight and reheated on the grill w/indirect heat. TASTY!

 
Were you able to get the probe into the tenderloin meat or was it just somewhere in the center of the roll? I guess I'm wondering if the probe was hitting the cheese @ 147, and if so  would the tenderloin be about 147 as well?
