I had some smoked tenderloin and was hankering for enchiladas.
  • Filling: chopped smoked tenderloin, cheese, sauced onion and garlic and enchilada sauce.
  • wrapped in flour tortillas - not a fan of corn.
  • rolled, cheesed on top,
  • baked 375 till melted, then sauced - covered for another 20-30.
Mexi rice. I tried quite a few recipes and this one is a fav and checks all the boxes (easy, yummy, few ingredients you likely already have)

  • 2 tsp olive oil
  • 1/2 onion, diced
  • 1 cup (medium or long grain) uncooked white rice
  • 1 tsp garlic salt (or 1/2 tsp garlic powder + 1/2 tsp salt)
  • 1/2 tsp cumin
  • 14 oz can Mexican Diced Tomatoes (diced tomatoes with green chiles)
  • 1/2 lime, juiced
  • 1 1/2 cups Chicken broth
  • 2 tbsp freshly chopped cilantro
