Large lump charcoal no smoking wood. Ambient grate temp was 390. Dome temp was 360. I'm still learning this new Kamado. I had ithem on the high shelf, no clay plates on the lower. Flipped once. Here was dessert (Starfruit cherry pie)

I have a couple of those skewers & have never used them, gonna have to dust them off & get a fire going!
