Started getting my stuff ready for the christmas gift for the guys in my department. Step one. 15lbs of hickory snack sticks. Ground it up added the seasoning and cure. Stuffed them in 16mm collagen casing. Let them sit overnight then cut them into 7 inch sticks. Smoked them to an internal temp of 155.

I will pack these up with the rest of the homemade gifts I will work on this week.

Yes, it was two butts, 15 lbs of meat once I removed the bones. I used a hickory seasoning I purchased at a local meat market, added my own cure. I ground it with a small plate then stuffed.
I like the 16mm casing as I find it yo be the perfect size for snack sticks, plus you get more sticks.
This gave me about 160 7 inch sticks. I ran out out 16mm and had to do a bit with 19mm but I will keep those for myself.
They came out really nice with good flavor. I used pit masters blend I got for A-Maze-N with a 6 inch tube smoker in my MES 30inch.

I have a never opened LEM #5 stainless steel body grinder. It is a few years old, just never out of the box. I'd be willing to sell and can ship via Spee Dee.

To the OP, those snacks look amazing! My son and I mixed a batch up yesterday and will smoke them tonight.
 
So every year I make a goody bag for the guys I work with. It was well received this year. It consisted of the following:
1 - Bag of snack sticks (from above) a dozen each
1 - bag of homemade marshmallows
1 - bag of homemade Toffee (about 8oz)
1 - jar of pink Himalayan sea salt with hot pepper flakes mixed in
1 - jar of a hot powder I make every year (hottest peppers I can grow) this stuff is almost too hot to use but they love it.
2 - Big homemade marshmallows dipped in chocolate and white chocolate with sprinkles on them

All turned out pretty well.
