Down in south Louisiana and cooking a jambalaya for Christmas Eve.
So far have everything cut up and the pork is cooking.
I will keep y’all updated as we go.

Sausage and Tasso are done.
Onions, green onions and garlic and “melting” now.
Then everything back in the pot.

Onions are clear and everything is back in the pot now to get the water out.
Then I’ll add the broth/water until it’s boiling. Then rice.
 
JB, Looking awesome , I can almost smell the goodness from here !
 
My family keeps coming around and saying, man the smells good. And they’re about to eat it! I think it would be cold by the time it made its way to New Hampshire!
 
Oh man, that looks awesome. Someday I need to try Tasso. It is a variant of ham, correct?
 
Steve, it is a lot like ham.
You make it out of pork butt and lots of cayenne, etc.
Waiting on rice to get soft now
