Seasoned up a pork roast and let it sit for about 5 hours in electric and another hour on offset to get it up to temp. Got it to 19o and was tasty. Made up a serving of mac'n'cheese. THat got my 21 year old daughter excited. It should have gone up about 15 degrees more to be shreddable. Still was tasty. BTW, I'm a Canadian and live in Canada. My wife from California introduced me to southern cooking and bbq. I was born in wrong part of the country. :D
