Hey y'all, been watching the forums, just haven't had a chance to smoke anything.

I've done butts, but this is the first Picnic I'm doing. Should I trim any of the fat on the bottom of it, or just leave it as it?

I usually trim all the outside fat off.
 
I leave it on but the next person will say different good luck ! Fs

I cut away the skin and smoke that too. The meat gets better smoke and the smoked skin can be used to flavor bean or greens. Of course your Dog will look at smoked pig skin as the greatest treat you could give...JJ
