The mother in law is in town for the week. Her and the wife went shopping and went to Aldi’s. Came home with a 3.65 lb pork loin. So what to do with it?
Made a marinade with olive oil, brown sugar, Italian seasoning, and the juice out of dill pickles bought at the Malcom Reed store here in Hernando. Marinated it for 4 hours flipping it every hour.

Into the Masterbuilt gas smoker at 250 degrees (where it wanted to run) with a Cherry chunk for smoke. Cooked to an IT of 145 degrees.

Sliced up and got a decent little smoke ring.

Had pintos, cornbread, mashed taters and corn with it. No plated pics. I had vultures circling. Good meal. And always nice to have the MIL down.
