Pork loin roulade with apples and cinnamon...

Well, I'm trying a pork loin with apples sliced and Saigon Cinnamon....   Slice the loin, roll style, so it's about 1/2-3/4" thick unrolled...  slice apples and place inside..   sprinkle with cinnamon...   I'm guessing this will come out something like applesauce on the pig...   NEVER done it before....  never tasted it...   

I'm still trying to find the perfect pork loin recipe...  or at least a pork loin recipe that is a 7 so I'm willing to try and improve on it...  I do like applesauce on pig...  that's one reason this test is happening.....


It's going in the smoker in the AM....  See you tomorrow.....

Looking good. Was that 4 hours of cold smoke or really low heat.
 
4 hours at ~110-140 F...      Temps going up now...  I will cook the loin to ~160 ish....   Temp in the smoker going up to 210 now...
 
OMG !!!    Juice was dripping out of the roulade...  smelled and tasted just like fresh made applesauce....     It's wrapped in foil cooling for supper..

BBL with pics of the slices....   and a taste test...  It sure does smell AWESOME !!
 
It came out pretty good....  The apples added a delightful refreshing twist to the loin....   The cinnamon was lightly noticed and a very good addition to the flavor profile...  I loved the smoke...  Pitmasters Choice pellets always adds a delicious smoke flavor to meats...   HOWEVER, pork loin is still pork loin...  It's still on my list of "Pork cuts to avoid"...   That being said, if you like pork loin, give this a try...   I think you will enjoy it immensely...

Looks good, we don't eat much pork loin either. I do however want to make some Canadian bacon.

Looks yummy. My wife made something similar to this in the oven. Apples and pork chops layered with Apple pie seasoning. We enjoyed it.

I'm with you porkmloin has its place. That place is thick cut boneless chops or Canadian Bacon!
Hey Dirt...  I agree....   even chicken fried steak is a good use for loin....
