Here we go!

I also put my WSM charcoal ring in my firebox to test it out. I had been using too old grates to create a v-shape.

So far so good. Been running between 250-275 with a few spikes up to 290, got my next split ready

Looks like a great start!
I like the idea of using the WSM ring for your charcoal basket.

Doing a Pork Butt here today also. Only 6lb, but we're a small unit :emoji_sunglasses:

Love the MES, but I"m actively fighting the impulse to go buy a new smoker....still researching but pray for my wallet!

Edit: finally got propane for my torch, so back to using the A-maze-n. Nice TBS going and no chips to mess with.

Another thing that is helpful is a smaller ash can. This one fits right under the firebox, so I have been able to dump my ash to keep a clean burn on this longer smoke
