Smoked a pork belly for 4 hours in the MES. Just before it was done, it started to rain. Not complaining as WE NEED RAIN! . Sliced up and served with a salad of tomato, mushroom, green onion and italian dressing.
There was also bbq sauce and made up a batch of cornbread from a mix. Tasty all round. Very little talking aside from yum and good job! :D

Looks fabulous. You know things are good when no talking. A grunt now and then, well, I can’t help myself. We enjoy those kind of salads.

Great meal.
Wifey had been kinda "eh" on uncured pork belly (side pork as we call it around here). I made some a few months ago and she gobbled it down. Need to try it again. She loves any meat that can go on a salad.
