First time firing up the smoker that my uncle build me since his passing a couple weeks ago. Kind of thought of a tribute to him. I think it he was looking over my shouldear on this one and I thank him as it was a hard cook.
Had some friends invite us to a party and said only if I can bring the food as they always say they have it covered. Went to the local Sams club,( thought the prices would be better than the local Wmart, but was wrong). Picked up 2 packs of Bbacks (3 each), 2 butts, and some bacon.
Seasoned meat friday night, got cooker fired up and to temp by 10:30 Sat. Butts on 11:15 and then the rain hit. Sometimes a downpour and most of the other time just a good rain. Didn’t realize how fast it can drop the temp. I had was using a blend of Oak,Pear, apple and pecan. I had too much dry fruitwood when the downpour came, but was able to get oak fired up before temp. went below 200*. I usually run between 275-325. Anyway, things turned out good and had good reviews.
Sides are pork shots and jalapeno poppers after.

Beautiful hard days work. I’d like to get a tour of that smoker. And, be invited to dinner. I would think your uncle would be pleased.

That is one serious smoker! Fantastic looking cook, too. Every bit of that looks delicious. Do you stir some more seasoning into the pork after you pull? Pic looks like you've got something more dusted in there, and I hadn't really ever thought of doing that before.

Thanks guys. Yes meat man, I usually separate the fat and then add in some more rub and some of the pork “jello” that separates under the fat. It always turns out moist..
I let the guests add sauce if wanted

Very nice. That’s a lot of food. I’m sure your uncle would be proud. How do you get the coals in the chamber ? They appear to be in a shelf on the sidewall am I seeing correct?

There is an 8” I beam that runs along the back wall of the chamber. Add splits or coal through the back door.

Impressive, I like the fire door. The entire rig looks like it could move under its own steam!

When you recover from this weekend, we might need a more detailed tour.
