Not bad. I feel it could have used more spices though. It does have good texture and moisture content.
 
Yeah I like the looks of the texture , and the color . Let it sit awhile , that might add to the flavor . Paper bag in the fridge if you have room .

Once I made a ham sausage with only salt, cure and just two more ingredients (by recipe). I was kind of in doubt if sausage come with a good taste and I was right in my doubt - the sausage tasted OK, but just OK. Have to admit that using little more ingredients in your sausage recipe will improve the taste, makes it "dipper". IMHO.
