Once I made a ham sausage with only salt, cure and just two more ingredients (by recipe). I was kind of in doubt if sausage come with a good taste and I was right in my doubt - the sausage tasted OK, but just OK. Have to admit that using little more ingredients in your sausage recipe will improve the taste, makes it "dipper". IMHO.I feel it could have used more spices though
