6" bladder Sbriciolona is done...and WOW! This will be awesome on sandwiches! Took right at 93 days to dry to 32% water loss. Still pull apart and crumbly, but the umami is off the charts from the long drying time. I will be making this samali again for sure!

I did cut one slice on the slicer to sample. Wow... the rest will be saved for sandwiches.
