No casserole category here, so I had to "other" it.
This is a casserole I created some years ago originally using low carb pasta. I make at least one of these every winter.
A lot of generic Walmart ingredients except the Italian sausage and pickled jalapenos.
I had 8oz of pasta shells left in a box, so I used those. Most any pasta shape works. I cooked it the day before and refrigerated it to convert to resistant starch (lower glycemic reaction). 6oz pack of pizza style pepperoni.
This is my go to pasta sauce. I jack it up with seasonings etc.. It’s a good blank slate for a lot of stuff.
Shrooms drained, squeezed/blotted and rough chopped, half a can of black olives sliced, pickled jalapenos.
Pound of hot Italian sausage.
Diced onions, jalapenos and minced garlic
Dump in one of the jars of marinara and step on it heavily with seasonings
Cut the pepperoni in halves and rendered in the microwave a few minutes to get some of the fat out (not worried about the fat health-wise, just don’t want the dish swimming in it)
Mix all but the pickled jalapenos together along with 2 cups Italian cheese shredded blend and in to a 9x13 pan
Top with 2 cups shredded mozzarella and the rough chopped pickled jalapenos
About 40 minutes covered at 350…uncovered 10-20 mins until it looks right
Meanwhile the second jar of marinara gets stepped on heavily
Plated, topped with marinara and grated parm.
