Yeah the muffin pans were just a thought I had so I figured I'd see if it worked.. And so far so good.. My recovery time wasn't bad.. About 15 minutes.. But I was able to keep the heat up.. Smoker didn't drop below 220.. Good smokes
 
Update on the picnics...

Overall it was just shy of a 16hr smoke.. My newest smoker preformed flawlessly!!



Pulled and ready to go.. I love how with pulled pork the bones just basically fall out when they are done!!!


I'm new to the forum and I must say I really enjoy getting to share my experiences and see other experiences as well!!! Good smokes

Looks great!  Haven't tried brining pork shoulder, that's got to add another nice layer of flavor.  I've done a few Boston butts and a couple picnic cuts in my two month smoking career, and I liked the Boston butts more. it was really tough to cut off all of the shoulder skin, I felt like Freddy Kruger by the time I was done!  I've seen smokers who just leave it on but no idea what the results look like.
