Watching the games today and need food for our main game with the AFC. So here we are rolling a picnic shoulder, half skin on and injected with our pork injection. Skin side down and getting happy. This is at 150 just before wrapping.
The picnic is a secret, not many know or understand it, but it’s probably the best pulled pork and as well makes an excellent cured ham.The fresh picnic has become my new go-to rather than Boston butt. I spend some more time picking out the larger fat pockets when pulling it but I find the flavor to be so much better.
I like the different muscle groups it has. Plus the larger bones make for some nice soup!
