Thanks for the inspiration! Followed your recipe but omitted the red pepper and lightly smoked the sausage with hickory for about 45 minutes prior. Looking forward to trying them!

New to me....
Three a burger on the grill...

Was still hungry, so i threw a piece of my pickled kiełbasa on...

Let it heat up and crisp casings a little...

Excellent!

First time for me, sure others have done it.

Will do it again.

I wonder how'd they taste butterflied and cooked on a grill or griddle?

I popped in looking for a kielbasa recipe and stumbled across this post. Reminds me of Penrose sausage I can no longer find in the stores. Do you measure the spices or just eyeball it? Thanks

WOW, Bill. Somehow I missed this ,

This looks and sounds great.

Is it also your kielbasa or store bought, and do you know how long this would last , say in the fridge ,as not sure if it is shelf stable .

Love this idea .

Glad it was brought back up.

David

That looks good. Saw this thread as I was just getting reading to sit down for dinner and it made me want to break out a jar of pickled eggs and hot guts.

Same here, John.
@bill ace 350 ace, damn that sure brings back memories of our old local cowboy bar.
I dated the bartender, so I was there pretty much every night, many of nights pickled eggs, and pickled sausage was my dinner, along with copious amounts of cold beer. LOL!!!
