Just a thought on paprika, look for Hungarian paprika, it is far superior to the more common Spanish type. It comes in sweet and hot versions.
My understanding is you can interchange Prague #1 with tender quick just follow the tender quick instructions per pound.
I just happen to have the prague powders because that's all I ever knew about until I came here so I have tons of it.
You can not use tender quick for Prague #2 though!
