Got a 23 lb corned beef Packer at RD. Soaked it overnight to desalinate it. Cut into 4 pcs to fit in the MES. Simple rub of coarse black pepper and ground coriander. Warming up the mes right now to 225°. With the temperatures here in Delmarva, I'm looking at being done late tonight (fingers crossed).
In the meantime... I got a couple shirts made up for when I'm out in my yard Q-ing. The shirts are Pedro approved. Lol
Got one for Pedro, for my dad and stepmom, and sending one to my brother in Annapolis today.

Made some pretzels to occupy my time on this crappy day. I don't know why I made so damn many..

First piece of flat got done around 10:30 last night. The other flat and the point didn't get done till between 3 and 4 a.m. this morning. 1st pc of flat sliced and Vac sealed into (3) 3/4 lb. packs

I have never even seen a whole corned beef packer around here.
