Not knowing much about pastrami am I reading this right? It lost almost half it's weight while getting smoked? I thought I would give this a try and was going to try to figure out how much I wanted to make.

Not knowing much about pastrami am I reading this right? It lost almost half it's weight while getting smoked? I thought I would give this a try and was going to try to figure out how much I wanted to make.

TheDad45373: You are reading it right. It started at 54 ounces and the rinse and smoking reduced it to 28 ounces.

Even in the oven a corned beef will shrink substantially. I am assuming it will be more shrunk in a smoker, but not anything to get excited about.
