That's 14 3/4 pounds of fat. Not sure if the primes are worth it??
 
35# of meat, minus 14.75= ~ 20 pounds....
 
price seems good for prime,not that I can get any have to stick to choice.
 
Two weeks later, pulled them out of the brine and into a bucket of plain water for a couple of hours...also cut a piece off for corned beef.  That went into the slo-cooker for St. Paddy's day dinner with cabbage.

More pics to come, I'll start smoking tonight.

Last time it took >12 hours to smoke, so I'll plan on the same....
