I smoked the Turkeys for the different families T-Days, a couple of days ago, so that left today for me to play. Earlier I did a bunch of traditional fattys and still had a lot of fuel left in the UDS so I threw a couple of corned beef flats on for pastrami.mmmmm

So here it is! I think its amazing how much moisture stays in the UDS even with a 2" hole in the top! both pieces came out tender and juicy.

There is always time for pastrami turkey day, christmas, new years, any holiday is a day for pastrami. there is almost always some in our house or atleast in the freezer. You did a good job to boot. looks ymmo

Your pastrami looked outstanding and has fired me up to make another!
 
Now THAT is a Thanksgiving I would enjoy!
Hell, could combine the two and make pastrami turkey
