Today I made some venison snake sticks with some beef fat. But when I weighed all the meat together, to figure out how much pink cure I needed some was still partially frozen. Did I mess on the by not letting all the meat thaw or will it be fine.i had 8.6 pounds of meat and used 9.75 grams of cure.
 
man that’s good to hear, after casing it all up I started reading that you never want to weigh meat frozen. I kinda figured I was in the clear but wanted the professionals opinion thank you
