I've had a Pancetta in a UMAi bag for a little over 10 weeks now and it's only at 16% loss. I'm afraid that 30% is a pipe dream and it will be a rock if it goes that long. The last one I made only went a month (I didn't track weight) and it was fine sliced.
Should I "Slice" or "Let it ride" ?
