Overnight Easter Pulled Pork in the UDS

Well I haven't posted much this last year.... need to get off my butt and do that more.

Took these butts out of the freezer last Monday to thaw out. last night (Friday) got them

in the UDS at 11PM.


Always stock up butts when they put them on sale for $0.99/lb






Got the rub all mixed up






Using Hickory pellets






Got to love the UDS for overnight smokes. Got up at 3AM to add more pellets. And made

a small adjustment for the temp and went back to bed. At 7 this morning added more

pellets. So over 8 hours I had to adjust the temp only one time. I will go out and probe

the butts at noon today to see how close they are to being done. I like smoking them in

pans. That way its easy clean up in the smoker and can catch all the juice. after they are

done I will defat the juice and pour back over the pulled pork. Turns out I only had two pans.

And in a small town no place to run out to get another one. So the 10lbs one is just on the

grate. The juice will just drip on the one below. Not sure if I will foil or not. Will decided that

when it gets around 180 . Thinking about making some Cole Slaw to go with it.

Will post some more pictures when its done.

We had the same idea and looks great! I've got one on that's been going about 7 hours for a tailgate tomorrow. Probably about half way done. Can't wait for tomorrow.
