overnight cook meant for dinner

Hello Everyone -

Have really enjoyed lurking here, and glad now to be a member :)

I have a question that has been puzzling me.  For all you guys that do an overnight cook, say a smoked boston butt - how do you keep the meat until dinner time? 

Love the idea of an overnight cook, but don't want my pork drying out and loosing flavor while waiting for dinner time 10-12 hours later.

Well we usually figure 2 hours per pound cook time at 225, so a 10 lb butt could take 20 hours to smoke.

So if you put it on at 8PM, it should be done the next afternoon around 4PM. If it gets done early you can wrap it in foil & put it in a 170 degree oven & it will stay hot until your ready to pull it for dinner.
