Figured I would toss this is general since it was no one specific ingredient.

Meant to post it several days ago after the induction was complete but computers, Windows Vista/7 and Micro$oft, how do I put this nicely...,their company is...their products and software are...well they just plain suck

So after 3 days of fixing computer issues with formats and several different OS installation attempts the problem was solved, no thanks to micro$oft!!

Ok, my mini-rant is over, but don't get me started on their Xbox either, on my third one now because of their RROD killing 2 previous systems AND the newest one scratched my copy of Beatles Rockband, and now it won't play!!!

So that day I wasn't even planning on smoking but figured it just wouldn't be right to not try and smoke something.
Cold, windy outside so I went for a few things that would only take a few hours.

Did some pepper shooter armadillo eggs, a mini fattie, and first try at both london broil and moink balls.

Pepper shooters and a few cubes of feta wrapped in JD bold sausage, moinks and a mini fattie with the same sausage, mozzarella, Italian seasoning, little extra basil and some fried garlic.






Oh yeah, and the london broil, almost forgot about that and after what I did to that poor piece of meat I wish I had.


Threw everything on over cherry @ 225-250


Now here is where it starts to go wrong. I remembered I wanted to sear the meat before smoking it so I took it off the smoker and put it over the chimney, and then forgot about it

Threw it back in the smoker, at this point I knew it was going to be well done and there is no reversing an overcooked piece of meat.
Pulled it about 45 minutes later when the feta wrapped sausage was done, they only took about an hour due to their size.




If you like feta try wrapping it in sausage and smoking, they were great.

Took some moinkers and a few pepper shooters and brushed a few with some honey cayenne mustard and very berry chipotle sauce I got in an exchange with Beer-B-Q.

The berry chipotle was great after going back in the smoker, love the honey cayenne mustard but it lost some of its flavor when going back in the smoker so I used it for a dipping sauce.
Moink balls were ok, used pre-frozen meatballs so next time I will make my own, thought they were soooooooo much better reheated the next day.

London broil, one of the dryest pieces of meat, um waiter...I'd like to send this back please.


Finally, the mini fattie. The fried garlic was really tasty with the mozz and seasonings.

LOL!!! You're light day of smoking is a monster day of smoking for me. Bummer about the beef but you get

Looks great. Man that makes me hungry. I hear ya about Microsoft. Gave up on them a long time ago. I am going to have to bookmark this post and try what you did when I get some time. Thanks for sharing such a mouth watering smoke.
 
Aside frome Operating Sysytems, it looks lioke you good one heck of a great smoke. The Q View tells it all, congrats. BTW, for reasons you already know, I still am running XP Pro w/out any probs.
 
Wouldn't recognize older operating systems for me, probably had something to do with it coming with Vista, but "The Borg" took care of everything

Great smokes and even that London Broil can be salvaged for something. Don't forget chili weather is coming upon us and that's some fine meat to toss into the slow cooker.

By the way, those armadillo eggs look fantastic.

Just remember Hit any key to contunie. Sorry about your delemma with the computer but the smoke looks awesome as usual. I really like the stuffed peppers stuffed with moza and pucuitto (spelling) I suck at it. But everything look fabulous and tastey too. Great job Jim.

Hey, everything looks great! err, except for the London Broil. So, I've always grilled mine...figured hat and fast for that thing.

What were your plans for it (after a proper sear of course

The pepper shooters (I assume those are the Stuffed Cherry peppers). Did you buy them that way or stuff them yourself? They do look good! If bought prestuffed, what do you ask for. If you stuffed them, is there a thread on what to do?
 
Vinman, I have always bought the prestuffed one, they have a couple of fancy fresh salad and olive bars at our local Shoprite and I get them there for $7.99lb
I grew my own cherry peppers and tried to make them at home but couldn't get the pickling process to taste right.
Found a really good sounding recipe for pickling them and then after thatyou simply wrap some proscuitto or capicola around a cube of aged (or smoked) provolone and pack them in olive oil (I'm going to do a garlic infused olive oil), hope it tastes great and you can be sure I will post my results.
 
I think you are on to an idea....if you get in to the OTBS then you need to do a inaugural smoke...I like it....good lookin food !!!!!!
