Found some monster jalapeños at the store, so doing batch #2. This time I used the same recipe from heygrillhey.com/bacon-wrapped-armadillo-eggs/., but I added some diced sweet Maui onion to the filling and used country sausage instead of plain for the wrap:

Thanks everyone. If you haven't yet, you gotta try making these. Lots of ways to make these; seems like chorizo and a Mexican cheese would be naturals...
