My annual sausage making. One of the recipes: organ sausage. Didn't get lung , spleen with my pig, but got an extra heart.

Made two recipes: arborio rice in one, coarse cornmeal in the other.

Used two types of casings: regular hog casings and hog middles. The larger hog middles make for a good roasted sausage. The thin ones we eat cold.

I would love some of that, but I wouldn't be able to walk for a week!

When I eat that type of sausage, I have a gout flare up from Hades! Love the guts, but they hurt me bad.

However, points for the process!
