Recently my SWMBO has had to go on a low sodium diet (which means me too) and I had given up on brining chicken.
The soy sauce idea sounds great and I'll be giving it a shot. LIKE!

Thanks for the like. My missus also has to go low sodium. If you want even lower sodium, substitute Teriyake Marinade for the soy sauce.

Missed this the first go 'round. I like the flavor combo. The Brine is Brilliant. Adding Umami from the Soy Sauce and not just salt? Impressed my friend...JJ
