Went to college for 4 years in Philly and somehow never had a roast pork sandwich. Too busy eating cheesesteaks. A couple of years back I finall had one at DiNic's in the Reading Terminal Market and was hooked. Had to make something like this at home so I searched the Internet and came across a post from SQWIB on this forum. His smoked, pulled version of this sandwich is just what I was looking for. Made a version of it tonight for tomorrow dinner.

Started with a loaf of ciabatta bread leftover from Easter that I had in the freezer:


Was experimenting with a pork cushion roast the other day and made some pulled pork with SQWIB's Philly Style Rub on the PBC. Put that on the ciabatta:
Then some broccoli rabe sautéed with garlic oil and red pepper flakes.
Then some peppers and onions leftover from tonight's fajitas:
Some shaved extra sharp provolone:

Game plan is to put it in the oven tomorrow on a pan covered in foil and bake at 400 for about 20 minutes or so until heated through. Unfortunately I will only be eating a piece for dinner and not the entire thing haha. Be back tomorrow!

extra sharp provolone? I need to look for some of that not sure why I haven't heard of it but I'm thinking I need to try it

Thanks so much!!  Yeah, the extra sharp provolone has a nice bite to it.  I had it vacuum packed for about 6 months so I think its even sharper than when I originally had it.

I love the method of baking the sandwiches covered in foil. Gets eveything hot throughout without changing the texture of the bread much if at all.

Haha thanks for kind words and the points!  This sandwich has become one of my favorites.  I can't believe I didn't even know the glory of this sandwich for the 4 years I was at St. Joe's.  And as I mentioned before, the Philly Style rub is good on everything!!
