Olive Salad Recipe for Muffaletta Sandwich

Just read @forktender's post about his Mufaletta Mistress. My family is from New Orleans and years ago, my mother put together this recipe for Olive Salad. We make it all the time and think it's great.

10oz Salad Olives
2 ribs celery, chopped
3 green onions and tops, chopped
10 toes of garlic, chopped
1/2 bell pepper, chopped
1 cup grated Parmesan Cheese
3/4 cup Olive Oil
1/2 tsp powdered bay leaves (if you can find them, otherwise optional)
1/2 tsp thyme
1/2 tsp oregano
1 tsp Coarse Black Pepper
1 tsp Garlic Powder
1 tsp Parsley Flakes


Mix all ingredients and store in refrigerator. It's definitely better the next day. Just in case the 10 toes of garlic wasn't garlicky enough, she added a tsp of garlic powder.

Put mufaletta together using salami, ham, turkey, provelone, or whatever deli meat and cheese you want. We actually like eating them on the ciabatta rolls from Costco. We put them all together and warm them until cheese is melted in the oven.

This actually freezes very well.

Sadly she passed away at age 90, 3 months ago. I hope you enjoy it.

I am super sorry to hear that, that is my worse fear in life, even at 60+ years old I'm a self admitted Momma's boy, I fear that day.

I don’t do it often but if you hollow out a nice crusty boule, stuff it with meat, cheese and muffuletta mix, then tightly Saran wrap it and let it rest a while or overnight . It all just melds together into the best sandwich ever.
 
I’m so sorry four your loss. My prayers for you and your family to navigate the loss.

The only time I’ve had muffuletta is with my parents in New Orleans and they are great memories. I’m nervous to try my own, but when I do, it’ll be this recipe. Thank you for sharing!
