Sad but true Al the small guy being pushed out by cooperate operations who also control the price.

Most of the property we did it on has been sold some still goes on on the rest of it but not like it used to. Not sure if it's still legal to transport live wild hogs here or not but it was back then however we rarely penned them when we were told to kill them it was usually 25-50 and higher a couple times so we didn't mess with them much other than butcher, grind , season, bag and freeze they gave most of it to the needy but of course none of us ever ran out lol.
 
All too much work for me!!
However I used to like to watch:
When I was a Kid, Me & 2 of my Buddies used to go up to "Barringer Bros Butcher Shop", and watch them Kill & Slaughter Steers & Pigs. They had a special bench against the wall, just for us Kids to sit on to watch them do the whole thing. That Butcher Shop is still there, and still makes the best Ring Bologna, and the worst Scrapple around. They don't do Deer any more---Something to do with contaminating their other meats in the same shop.
