My replacement element came in today. I just finished wiring it direct.
Stenciled in white on top...
"PLUG INTO CONTROLLER ONLY!"
"NEVER INTO WALL OUTLET"

I have it plugged into my new Auber WDS1200GPH and programmed it for 225 F for 4 hours.
After the first half hour it appears to be holding at 224 with top vent wide open and chip loader out. However the other digital probe I have in there reads 230. They are at the same level and right next to each other. Still close enough for smoking ;-)
PS Smoker is gutted for use with the AMNPS.

Yup , you're good . You can adjust the difference to match the therm , not really needed .
 
Nice work!

I make sure I have 3 probes running at rack level (back left, center/center, and front right) of my smoker. This gives me the end to end temp understanding of what is going on with my rack and my smoke. The front right portion of my smoker is the coldest where the back left is the hottest.

If I ever get a weird reading from one of the probes the other two give me great confidence in understanding what is going on. Sometimes meat drips on a probe, a pan or meat touches a probe, or airflow is blocked to a probe and that can give weird or false readings BUT that doesn't usually happen to the 2 other probes on my rack level so I'm usually good to go without any catastrophes or head scratching :)

Came out quite tasty but I am disappointed with the "Low & Slow" recipe I found. Meat was chewy.

Really ? Dang man , it looks perfect . I know I say this to much , but try the Tony C's injection on the next one you smoke / cook . Not needed for the SV , but comes out great on the grill or smoker .

I do mine at 250 start to finish on a PID controlled mes 30 .
 
Don't get me wrong. It was delicious, just not as tender as I was hoping for.
If I can find my darn slicer I'll slice it up paper thin then ya won't be able to tell it was tough! ;-)
 
Cool . How you like the auber ?
This was it's maiden voyage. I am stoked. I had gone though several replacement MES controllers and gave up. I was fixing to order everything to build a PID Controller then I saw where it was not much more for the Auber and being a lazy old man......

You can Low & Slow Great Eye Round, but it has to be sliced real thin.
