Ok so I have not posted in a while and here is a tritip used several ways

Here is a tritip with some great rub from my friends the Two Irish Fools

The first nite we sliced it and had it with some baked taters

 Here we are with some slices for incredible sammies

And we finished it off with some awesome street tacos

I really want to try tri tip that looks so good. Don't see that cut in NC, I need to get in good with a real butcher. This post gave me a kick in the pants to get on the ball and find me some tri tip!

Ah but the Pico de Gallo is full of jalopenos - I love the spicy stuff
