I found the most beautiful 7 pound rack of beef short ribs that were just asking for a bath in smoke. I had to oblige....

After trimming the fat cap, I seasoned them up with Meat Church "Holy Gospel" rub, and gently put them in the Yoder YS640. I used oak pellets, set the temp for 275F, and sat back for 9 hours to let the magic happen.

So tenda, you could cut them with a spoon...
