So today my little ones wanted to grill and I wanted to smoke something awful...been a few weeks since my last smoke so I was trying to find something different. What I found was a good little way to do smoked pork steaks!!

So we smoked them and seared them off with a good glaze!!

Man that looks great. What did you use for rub & temp?
 
It's a layered rub...came out a little hot on the big end but still good. First layer was a honey and garlic powder with a little mesquite. Few other things that kicked up the heat a little much. Then after they rested it was a paprika based rub that's real good all purpose rub. Temp I was shooting for was 275* or just under but I figured out my Weber has broken wipers on the bottom. Couldn't get below 325* so ended up a little higher finish temp but still tender and tasty.
