It's a beautiful day in North Texas, mid 70's and sunny. Perfect weather to get out and cook.

Had some ribs in the beer fridge that I just had to deal with so....

Hit the racks with Montreal seasoning and dusted with house GPR-86 (Killer general pork rub). The trimmed tips I wanted to do differently so nothing but garlic salt and plenty of paprika. Both will get a light glaze in a few hours. Using post oak and pecan today.

Well, the tips a.k.a. chefs treats are done and they taste pretty good. Decided not to sauce these. Nothing sweet on them, pure savory.

The ribs themselves did get sauced, they are resting until they are cool enough to handle and cut up.

I also decided to smoke some cornbread to go with. Basic, nothing fancy, I did substitute honey for sugar and I don't like an overly sweet cornbread so I measure the sweetener in tablespoons instead of cups.

Turns out that top rack is perfect for baking even while doing slow and low.

Those Ribs look fantastic! Did not realize you live in North Texas. Sure been nice this last week.
The weather has been great, especially the fast 3 or so, even a little cool in the mornings. I think it will warm a little for a few weeks and maybe we'll get our 2 weeks of fall :) This is the golden time of year to cook outside.
