Northern Bound Assorted Sausages

Last week i was up in NEPA for my neighbors sons funeral. They are having a rough time so we are making a surprise trip up this week. He likes ring bologna and other sausages

I got 30 lbs to make.

5 lbs of pepperoni mixed, dont know yet if going to be sticks or chubs.

Good looking sausage.  Do you prefer those casings for bologna?  I have only used hog so far.

I like these over natural rounds. These are non edible collagen rounds, i stuff tight and never have blow-outs with them.

Cut them in half and vac seal this way all the northern hunting buddies can get some.
