Howdy all! Just registered, been reading for a while now. Lurking I guess you call it. Anyway, been smokin' for about 10 years, grillin' all my life (52 years). OK, maybe not all, but most of my life.

As to equipment, my in-laws bought me a Brinkmann Smoke & Grill. Electric. I like the "set and forget" aspect of it. I know some folks don't think the best of these smokers, but I love it!! As a matter of fact, I still have it and its the one I still use. Smoked HUNDREDS of times in it. Mostly pork. Butts, ribs and loins. Chickens. Sausages. Some veggies. I actually like smoked potatoes. The only "mod" I've made is I bought a "router speed control" from Harbor Freight for ~$15. Lets me get the temp down now and then. I'm about to attempt some pastrami, and will soon post some questions about said pastrami.

Anyway, I'm sure more questions than answers from me to start.

I'm with you on the ECB...they have their merits, and can be made into a pretty decent little rig without too much difficulty. I have a Gourmet charcoal, heavily modified, to go along with my arsenal of other smokers. Of all my smokers, I enjoy the using my Gourmet most...I've been accused by wife and daughters on having "my favorite"...they're correct. Maybe it's just the mystique of building and tending a charcoal fire, or the added flavor and potential for stupendous smoke penetration, but the challenge in learning how it likes to work, and taking that knowledge into practical form just keeps me coming back to it. I smoke in my other rigs, too, but it's just not the same personal experience for me.

By all means, do fire away with any questions you have. We're all here to learn and share our experiences.

As for the ECB - hey no problem if it does what you want it to do and you like it. After all isn't that what counts?

Lots of tips, tricks, recipes and helpful folks so if you can't find what you're looking for then by all means ask away!
 
If the rig is one you know and it works it ain't bad!  I started out on an LP smoker and it was great...until I blew it up!
