Long-time griller but new to smoking. Mr Claus dropped off a new Rec-Tec at Christmas and since then I’ve been educating myself on smoking meat and gathering up the accessories to get started.SMF, bar none, is the most comprehensive site I’ve come across. My only smoke so far was a couple racks of St. Louis ribs using the 3-2-1 method, which turned out perfect (to my shock and disbelief). I hope to tackle a full packer brisket soon. Look forward to learning more from the members here and, hopefully, sharing some success stories.

Welcome aboard, glad the ribs turned out the way you wanted. Don't hesitate to jump in any of the discussions. Looking forward to seeing some of your future smokes.

Good afternoon and welcome to the forum from drizzley chilly day here in East Texas, and the best site on the web. Lots of great people with tons of information on just about everything.
