Hello all, I'm Jim and I live just outside of Charlotte, NC.  I have worked as a catering chef for a number of years but am now venturing into the world of smokers and smoked meats.  I have done a few butts and ribs over the years on a friends smoker, but recently purchases a 40" MES because it was too good of a deal, I couldn't pass it up.  

I would love to get some of your suggestions for good rubs and recipes for good brisket.
